Diet Pumpkin Muffins Recipe
- 2 Large eggs, beaten (or possibly 3 egg whites or possibly egg beaters)
- 1 c. pumpkin
- 2/3 c. instant non-fat dry lowfat milk (use dry)
- 2 teaspoon pumpkin pie spice
- 1 teaspoon cinnamon
- 8 pkg. Sweet & Low (Equal does NOT work)
- 1/2 c. grated carrots
- 1/3 c. flour
- 1/4 c. raisins
- 1 teaspoon soda
- 1 teaspoon vanilla
- Beat Large eggs in bowl.
- Add in all remaining ingredients and mix well.
- Spray muffin pan with Pam.
- Spoon into 12 large or possibly 24 mini muffins.
- Bake at 350 degrees for 15 min.
- Keep refrigerated.
- May be frzn.
