Arnold Palmer inspired cake
- 1 cup strong tea, I used loose leaf Oolong tea
- 1/2 cup vegetable oil
- 4 medium eggs
- 15 1/4 oz cake mix, I used Betty Crocker yellow cake mix
- 8 oz package cream cheese, softened
- 1/4 cup butter softened
- 6 cup powdered sugar
- 1 tbsp lemon zest
- 3 tbsp lemon juice
- 1/2 cup tea leaves or 4 family sized tea bags
- 1 1/4 cup boiling water
- 1/3 cup sugar
- Preheat oven 350 Fahrenheit
- Boil the water for tea add tea leaves , or bags
- Add sugar stirThe water will quit boiling when it comes to boil again remove from heat cover let steep let this cool to touch then strain
- Mix the ingredients for the cake but only use 1 cup of tea
- pour into a 9x13 pan put into oven for 28-33 minutes let it cool
- For the frosting: in a mixing bowl, add cream cheese and butter mix on a medium speed till creamy
- Now slowly add powdered sugar a cup at the time till all six are done
- Add lemon zest and juice till just incorporated now turn the mixer to high till light and fluffy
- Cover the top of cake with frosting cut and serve hope you enjoy
