Freaking Tasty Chicken Cacciatore
- 6 boneless, skinless chicken boobs (aka breasts), sliced in half horizontally
- 4 cups tomato-basil or marinara sauce
- 1 cup coarsely chopped yellow onion
- 1 cup coarsely chopped green bell peppers (I think these things are disgusting, but my wife likes them and I like her kissing my ring)
- 1 can (6 oz) sliced mushrooms, drained (optional because mushrooms are nasty)
- 1/4 cup dry red wine (optional but it definitely adds to the flavor)
- 2 teaspoons minced garlic
- 2 teaspoons dried oregano
- 2 teaspoons dried thyme
- 2 teaspoons salt
- 2 teaspoons black pepper
- Heat oil in a skillet over medium heat.
- Brown chicken on both sides.
- Drain and transfer to your favorite slow cooker.
- BE SURE to cook on low.
- This isnt the time to be reinventing the wheel.
- I know from experience.
- I botched this the first time I did it because I cooked on high.
- Add remaining ingredients and stir well to combine.
- Or don't; some people don't care for well-balanced flavors.
- Cover; cook on low for 5-7 hours on low (5 hours is probably plenty) or 2 to 3 hours on high.
