Apple Black Walnut Cake Recipe
- 1 c. Sugar
- 3/4 c. Veg. oil
- 2 x Large eggs
- 1 1/2 c. Flour
- 1 c. Black walnuts, minced
- 1 tsp Baking soda
- 1 dsh Salt
- 1 tsp Vanilla
- 2 c. Unpeeled minced apple
- 4 Tbsp. Butter
- 1 tsp Vanilla
- 1/2 lb Confectioner's sugar
- Mix sugar and oil.
- Add in Large eggs, beat till fluffy.
- Sift dry ingredients together and add in to sugra, oil, and egg mix.
- Blend in vanilla.
- mix in black walnuts and minced apples.
- Pour into a well greased and floured loaf pan.
- Bake at 350 F for 40 min.
- ICING: Soften butter and blend with powdered sugar.
- Add in vanilla.
- Use cream to blend to a spreadable consistency.
- Spread on cake.
- NOTE: For holiday gift giving, I like to bake this recipe in four miniature loaf pans, wrap in plastic wrap, and tie with a bow.
- This is nice with a c. of warm tea.
