S'mortobello Burger
- 4 large portobello mushroom caps
- 4 oz fresh mozzarella
- 1 eggplant
- 1 large tomato
- 4 burger buns
- 1 fresh basil
- 1 fresh oregano
- 1 ground black pepper
- 1 olive oil, extra virgin
- Preheat grill
- Peel eggplant and slice crosswise into 1/4 inch thick rounds
- Slice mozzarella into 1/8 inch rounds
- Slice tomato into 1/4 inch rounds
- Toss mushrooms and eggplant in a bowl with minimal amount of olive oil; just enough to lightly coat.
- Grill mushrooms, eggplant and tomatoes
- (optional) Toast buns and set aside.
- Turn off grill.
- While still on hot grill, season eggplant slices and top with mozzarella slices.
- Close grill cover and allow cheese to melt.
- Top eggplant /mozzarella with grilled mushroom then top off with grilled tomato slice
- Transfer the stacked s'mortobello to a bun.
