S'mortobello Burger

  1. Preheat grill
  2. Peel eggplant and slice crosswise into 1/4 inch thick rounds
  3. Slice mozzarella into 1/8 inch rounds
  4. Slice tomato into 1/4 inch rounds
  5. Toss mushrooms and eggplant in a bowl with minimal amount of olive oil; just enough to lightly coat.
  6. Grill mushrooms, eggplant and tomatoes
  7. (optional) Toast buns and set aside.
  8. Turn off grill.
  9. While still on hot grill, season eggplant slices and top with mozzarella slices.
  10. Close grill cover and allow cheese to melt.
  11. Top eggplant /mozzarella with grilled mushroom then top off with grilled tomato slice
  12. Transfer the stacked s'mortobello to a bun.
