Apple Cake

• 4 cup apple
• 1/2 cup vegtable oil
• 2 cup sugar
• 2 eggs, beaten
• 2 cup flour
• 2 tsp cinnamon
• 2 tsp baking soda
• 1 tsp salt
• 2 tsp vanilla
• 1 cup chopped nuts, optional

1. Preheat oven to 350F (325 for a glass baking dish)
2. Mix together in a large bowl.
3. Pour into a 13x9 inch baking dish and bake for 50-60 min.
4. ICING: Beat 8 oz of softned cream cheese with 1/2 cup of butter and 1 tsp vanilla.
5. Add icing sugar to desired taste.
6. Make about 1 1/2 cups.
