Roasted Sweet Onions
- 2 vidalia onions (Walla Walla, Maui Sweet, etc) or 2 sweet onions (Walla Walla, Maui Sweet, etc)
- 2 beef bouillon cubes
- 2 garlic cloves, crushed
- 2 tablespoons butter
- 2 dashes fresh ground black pepper
- 2 dashes ground paprika
- Preheat oven to 400F.
- Cut a thin slice off the root end of each onion so it stands flat.
- Put two perpendicular cuts into each onion (as though you were going to cut it into quarters), but only cut 3/4 of the way down, leaving the root end intact.
- Place each onion on a piece of aluminum foil big enough to wrap it completely.
- Place a bouillon cube into each onion.
- Top each with one clove of garlic (about 1/2 tsp) and butter.
- Sprinkle with pepper and paprika, then wrap foil tightly.
- Roast in preheated oven 30-40 minutes.
