Canadian Bacon and Cheddar Muffin Puff

  1. Combine mustard, honey and caraway seeds; spread 1 tbspful on each muffin half.
  2. In a large skillet, melt butter and saut Canadian bacon slices until thoroughly heated, turning once.
  3. Remove with slotted spoon.
  4. Saut apple slices lightly in drippings.
  5. Arrange Canadian bacon slices and apple slices on muffins; place on baking sheet.
  6. In a large bowl beat the egg whites until stiff peaks form.
  7. Fold in cheddar cheese, paprika, salt and pepper.
  8. Mound on muffins, spreading evenly over topping.
  9. Broil in a preheated broiler until puffed and golden, about 1 minute.
  10. Garnish with a parsley sprig and additional apple slices.
  11. Serve immediately.
