Irish Brown Bread

  1. Preheat the oven to 400F.
  2. Mix dry ingredients.
  3. Stir in enough buttermilk to make the dough soft.
  4. Dust the work surface with wheat flour.
  5. Knead the dough until smooth.
  6. Form dough into a circle about 1 1/2 inches thick.
  7. Mark a deep cross in the top with a floured knife.
  8. Put on parchment paper and place on a baking sheet.
  9. Bake for 45 minutes or until bread is browned and sounds hollow when tapped on the base.
  10. Cool on a wire rack and wrap in a clean tea towel to keep soft.
