A Versatile Green Broccoli-Rabe Pasta Sauce
- 1 1/2 pounds broccoli rabe, trimmed and cut across into 1-inch pieces
- 6 tablespoons olive oil
- 1 teaspoon crushed red-pepper flakes
- 1 teaspoon salt
- Freshly ground black pepper to taste
- Place the broccoli rabe in a five-quart casserole.
- Toss with the olive oil and crushed red-pepper flakes.
- Cover tightly with microwave plastic wrap.
- Cook at 100 percent power in a high-power oven for 10 minutes.
- Prick plastic to release steam.
- Remove from oven and uncover.
- Season with salt and freshly ground black pepper to taste.
- Toss with cooked and drained pasta.
