Gerry'S Chocolate Mocha Mousse

  1. Brush both sides of eggplant slices with the oil; sprinkle lightly with salt.
  2. In large skillet, brown eggplant slices, about 1 1/2 minutes on each side.
  3. Drain and set aside.
