Gerry'S Chocolate Mocha Mousse
- 1 lb. semi-sweet chocolate, chopped
- 1/4 c. (1/2 stick) unsalted butter
- 2 tsp. instant coffee powder or crystals
- 1/3 c. water
- 2 large egg yolks
- 1/3 c. kahlua
- 4 large egg whites (at room temperature)
- 4 Tbsp. sugar
- 1 c. whipping cream
- 2 large eggplants, peeled and cut into 1/2-inch slices
- 2 Tbsp. cooking oil
- salt
- 2 lb. lean ground lamb, ground beef, turkey or chicken
- 1 c. chopped onion
- 1 clove garlic, minced
- 1 (8 oz.) can tomato sauce
- 3/4 c. dry red wine
- 2 Tbsp. snipped parsley
- 1 tsp. salt
- 1/4 tsp. dried oregano, crushed
- 1/4 tsp. ground cinnamon
- 1 beaten egg
- 1/4 c. butter or margarine
- 1/4 c. all-purpose flour
- 1 tsp. salt
- dash of pepper
- 2 c. skim milk
- 3 beaten eggs
- 1/2 c. grated Parmesan cheese
- ground cinnamon
- Brush both sides of eggplant slices with the oil; sprinkle lightly with salt.
- In large skillet, brown eggplant slices, about 1 1/2 minutes on each side.
- Drain and set aside.
