Grandma's Avocado Black Bean Salsa
- 10 fresh tomatoes (diced)
- 1 medium onion (diced)
- 13 cup cilantro (leaves only)
- 1 (5/8 ounce) package Good Seasonings Italian salad dressing mix
- 2 avocados (diced)
- 1 (15 ounce) can black beans (S&W Frijoles Negros)
- 1 (15 ounce) can white shoepeg corn
- 18-14 cup lime juice
- I put the avocados in the lime juice for a few minutes to preserve color.
- About 2 limes make enough juice.
- Drain and rinse the black beans.
- Drain the corn.
- Allow to sit to blend flavors.
- (I used plain white corn.
- I couldnt find Shoepeg, whatever that is).
- This makes a LOT but it lasts several days in the fridge.
