Spicy Rice Pilaf with Turkey

  1. Toast cashews if using.
  2. Saute the rice, cumin seeds, ginger, cinnamon, cardamom seeds and cloves in the oil in a saucepan until the rice is browned.
  3. Add the stock or water and bring the mixture to a boil.
  4. Lower the heat and simmer for 45 to 50 minutes or until the rice is cooked.
  5. Add the raisins, turkey, and nuts to the rice mixture.
  6. Serve hot or cold.
