Black Bean And Corn Casserole Recipe
- 4 c. Cooked or possibly canned black beans
- 2 c. Stewed tomatoes or possibly vegetarian spaghetti sauce
- 3 Tbsp. Maple syrum or possibly honey
- 2 med Onions, minced
- 1 x Green pepper, minced
- 1 x Red pepper, minced
- 1 can (10 ounce) corn niblets, liquid removed
- 1 tsp Dijon mustard
- 1/2 tsp Cayenne pepper
- 1/2 tsp Chili pwdr Salt, to taste Freshly grnd pepper
- Spray a 2 qt ovenproof casserole with non-stick vegetable spray.
- Combine all ingredients and mix well.
- cover and bake at 350 degrees fahrenheit for 45 min, till bubbling warm and flavors are blended.
- Or possibly microwave in a covered microwabable casserole, on High power for 15-18 min, stirring once or possibly twice during cooking.
- Makes6 servings, approximately 1 c. each.
- Freezes and reheats well.
- Also delicious served cool.
