Quinoa and Black Beans

  1. Heat a pan on medium-high heat.
  2. Drizzle olive oil and saute diced onion and garlic.
  3. Thinly slice jalapenos and add to pan, with seeds if heat is desired.
  4. Add diced bell pepper (optional).
  5. Add quinoa and brown with vegetables for 3-5 minutes.
  6. Slowly add in chicken broth.
  7. Then add all other ingredients and cover.
  8. Decrease heat to low to allow ingredients to simmer about 15 minutes.
  9. Check to ensure quinoa is cooked.
  10. Make sure to season while cooking.
  11. Add chopped cilantro a few minutes prior to completion if desired.
