Cajun Chicken Salad (Ww)
- 4 cups mixed lettuce leaves
- 1 cup snow peas, trimmed
- 1 cup cherry tomatoes
- 1 cup yellow pear-shaped tomatoes
- 34 cup celery, sliced
- 14 cup shallot, chopped
- cajun seasoning
- 10 ounces skinless chicken breasts
- 2 tablespoons fat-free Italian salad dressing
- Place the lettuce in a serving dish and top it with the vegetables; set aside.
- Sprinkle Cajun seasoning over the chicken and broil, grill or barbecue it until cooked.
- Slice the chicken into thin strips.
- Arrange the warm chicken over the salad and drizzle with the dressing.
