Beef and Burdock Root
- 180 grams Beef shoulder offcuts
- 160 grams Burdock roots
- 1 knob Ginger
- 1 decent tablespoon Cooking sake
- 2 tsp Hon-Mirin (real mirin)
- 1 decent tablespoon Soft light brown sugar
- 1 1/2 tbsp Soy sauce
- 1 very modest amount Salt
- 1 Vegetable oil
- 1 Sansho leaf
- Scrub or slightly scrape the skin off the burdock roots.
- Chop up roughly and soak in water.
- Drain immediately.
- Heat some oil in a frying pan and grill the beef.
- When brown, add julienned ginger and turn the heat to low.
- Add the condiments in listed order.
- When the beef soaks in the condiments, add burdock roots and stir quickly.
- Pour in enough water to soak the ingredients, and simmer over medium low heat.
- Dish it up.
- Top with slightly pounded sansho leaves.
