Creamy Tomato Bisque

  1. In a large saucepan, bring first five ingredients to a boil.
  2. Reduce heat.
  3. Cover and simmer for 15 ot 20 mintues or until vegetables are tender.
  4. Cool.
  5. Puree mixture in a food processor or blender and set aside.
  6. In the same saucepan, saute fresh tomatoes in butter for 5 minutes.
  7. Stir in flour to make a smooth paste.
  8. Gradually add cream and stir over low heat until thickened.
  9. Stir in pureed mixture and sherry if desired.
