Gemelli With Wilted Mustard Greens
- 8 ounces gemelli pasta
- 1 tablespoon olive oil
- 4 garlic cloves, minced
- 8 cups mustard greens, chopped
- 12 teaspoon sea salt
- 1 tablespoon lemon juice
- 2 teaspoons Dijon mustard
- 12 cup grated parmesan cheese
- Cook pasta.
- In large skillet over medium heat, heat oil.
- Add garlic and cook, stirring for 30 seconds.
- Add mustard greens and salt; cook, stirring for 2-3 minutes or until greens are wilted.
- To the pasta, add greens, lemon juice, mustard and 1/4 cup of the pasta water.
- Cook, stirring over medium high heat until heated through.
- Stir in cheese.
