Breakfast Fried Rice
- 3 cup cold, cooked white rice
- 1/2 lb ground breakfast sausage
- 3 each eggs, lightly scrambled
- 2 each green onions, diced
- 1 tbsp Kikkoman soy sauce
- Set stove burner on medium-high.
- In large skillet, wok, or dutch oven brown the sausage.
- Drain, reserving fat.
- In same skillet, cook eggs until just set.
- Remove.
- In same skillet, add 2 tablespoons pork fat(if you don't have enough, you can supplement with butter or vegetable oil).
- Heat fat until hot and add rice.
- Cook rice until lightly brown, turning occasionally.
- When rice is browned: add sausage, eggs, diced green onions, and soy sauce.
- Mix well.
- Remove from heat.
- Serve immediately.
- Season individual servings with additional soy sauce if needed.
- Enjoy!
