Polenta with Caramelized Apples
- 1 pound Instant Polenta
- 6 cups Apples (peeled And Chopped)
- 2 Tablespoons Sugar
- 1/4 Tablespoons Ground Cinnamon
- 1/2 cups Butter
- 1 cup Shredded White Mild Cheddar Cheese
- Prepare polenta following the package instructions.
- Spread polenta 1/2 inch thick onto 2 greased 9x13 rimmed baking sheets and set aside.
- In a large bowl, toss apples with sugar and cinnamon.
- Melt butter over medium heat in a large skillet.
- Add apples to skillet and cook, stirring occasionally, until apples are tender, about 15 minutes.
- Drain any excess butter.
- Preheat oven to 325 degrees F. Cut polenta into 2-inch squares or use a cookie cutter to cut out pieces.
- Top polenta with apples and sprinkle with cheese.
- Bake in the oven for 5 minutes until cheese is melted.
- Serve warm.
- Variations: Before serving, sprinkle with cinnamon and sugar.
- Omit cheese and drizzle with warm caramel sauce.
- For thicker polenta, spread in one 9x13 pan.
- Use 3 cups apples, 13 cup butter, 1 tablespoon sugar and 18 cinnamon.
