Polenta with Caramelized Apples

  1. Prepare polenta following the package instructions.
  2. Spread polenta 1/2 inch thick onto 2 greased 9x13 rimmed baking sheets and set aside.
  3. In a large bowl, toss apples with sugar and cinnamon.
  4. Melt butter over medium heat in a large skillet.
  5. Add apples to skillet and cook, stirring occasionally, until apples are tender, about 15 minutes.
  6. Drain any excess butter.
  7. Preheat oven to 325 degrees F. Cut polenta into 2-inch squares or use a cookie cutter to cut out pieces.
  8. Top polenta with apples and sprinkle with cheese.
  9. Bake in the oven for 5 minutes until cheese is melted.
  10. Serve warm.
  11. Variations: Before serving, sprinkle with cinnamon and sugar.
  12. Omit cheese and drizzle with warm caramel sauce.
  13. For thicker polenta, spread in one 9x13 pan.
  14. Use 3 cups apples, 13 cup butter, 1 tablespoon sugar and 18 cinnamon.
