Chicken Kelaguen
- 3 lb chicken breast
- 1/2 cup lemmon juice
- 6 small hot peppers (optional)
- 1 cup coconut (grated)
- 1 tbsp salt
- Cut chicken in half and sprinkle with salt.
- Place in a broiler pan or grill over charcoal.
- Broil for 10 minutes.
- Turn chicken over and broil 5 minutes more.
- De-bone and chop or grind chicken.
- Throughly mix chicken with remaining ingredients in a bowl.
- Add more lemon juice and salt to desired taste.
- Chill at least one hour.
- Served on chilled lettuce leaf, corn or flour tortillas.
