Chicken Kelaguen

  1. Cut chicken in half and sprinkle with salt.
  2. Place in a broiler pan or grill over charcoal.
  3. Broil for 10 minutes.
  4. Turn chicken over and broil 5 minutes more.
  5. De-bone and chop or grind chicken.
  6. Throughly mix chicken with remaining ingredients in a bowl.
  7. Add more lemon juice and salt to desired taste.
  8. Chill at least one hour.
  9. Served on chilled lettuce leaf, corn or flour tortillas.
