Holiday Brie En Croute

  1. Preheat oven to 400 degrees.
  2. Line a 15-1/2x10-1/2-inch jelly-roll pan with parchment paper.
  3. Combine cranberries, brandy, lemon peel, and salt.
  4. Cut puff pastry sheet into a 6x9-inch rectangle.
  5. Roll out into a 14-inch square.
  6. Place wheel of Brie in center.
  7. Cut off top rind of Brie and discard.
  8. Top with cranberry mixture.
  9. Gather pastry around Brie; twist in center.
  10. Secure twist with kitchen string; trim excess dough.
  11. Place on jelly-roll pan and bake for 25 minutes or until golden brown.
