Blair Banana Pudding Recipe

  1. Prepared and cold pie mix, mix in 1 c. dairy topping.
  2. Arrange a layer of vanilla wafers in bottom of a 2 qt baking dish.
  3. Place a layer of banana slices over wafers in dish.
  4. Spoon a layer of pudding over bananas, continue alternating wafers, banana slices and pudding, ending with pudding.
  5. Reserve 2 to 3 egg whites from preparation of pie mix and prepare meringue using electric mixer at medium speed.
  6. Beat egg whites with dash of salt.
  7. Gradually beat in 1/3 c. sugar and 1 tsp.
  8. BLAIR colorless vanilla flavoring.
  9. Continue beating at high speed till mix forms stiff, shiny peaks.
  10. Lightly pile meringue on pudding, sealing edges well.
  11. Bake in preheated 425 degree oven for 5 - 10 min till meringue is lightly browned.
  12. Serve hot or possibly chilled.
