Double Chocolate Muffins
- 1-1/3 cups firmly packed brown sugar
- 1 cup butter, softened
- 12 squares BAKER'S Semi-Sweet Chocolate, melted
- 3 cups applesauce
- 4 each eggs
- 4 tsp. vanilla
- 1-1/4 qt. flour
- 2 tsp. CALUMET Baking Powder
- 2 tsp. baking soda
- 12 squares BAKER'S Semi-Sweet Chocolate, cut into chunks
- Place brown sugar and butter in 12-quart bowl of electric mixer fitted with paddle attachment.
- Beat on low speed 1 min.
- or until creamy.
- Add melted chocolate, applesauce, eggs and vanilla.
- Beat 2 min.
- or until well blended, stopping occasionally to scrape side of bowl.
- Add flour, baking powder and baking soda.
- Beat 1 min.
- or just until moistened.
- Stir in chocolate chunks.
- Spoon evenly into 48 paper-lined medium muffin cups (or 12 prepared muffin cups for trial recipe).
- Bake in 350F-standard oven for 18 to 20 min.
- or until toothpick inserted in centers comes out clean.
