Double Chocolate Muffins

  1. Place brown sugar and butter in 12-quart bowl of electric mixer fitted with paddle attachment.
  2. Beat on low speed 1 min.
  3. or until creamy.
  4. Add melted chocolate, applesauce, eggs and vanilla.
  5. Beat 2 min.
  6. or until well blended, stopping occasionally to scrape side of bowl.
  7. Add flour, baking powder and baking soda.
  8. Beat 1 min.
  9. or just until moistened.
  10. Stir in chocolate chunks.
  11. Spoon evenly into 48 paper-lined medium muffin cups (or 12 prepared muffin cups for trial recipe).
  12. Bake in 350F-standard oven for 18 to 20 min.
  13. or until toothpick inserted in centers comes out clean.
