Easy Apple-Raisin & Shortbread Pie
- 2/3 cup sugar
- 2 Tbsp. MINUTE Tapioca
- 1-1/2 tsp. ground cinnamon
- 4 Granny Smith apples (1-1/2 lb.), peeled, thinly sliced
- 1/3 cup golden raisins
- 1 (9 inch) frozen deep-dish pie crust
- 8 square shortbread cookies, crushed (about 2/3 cup)
- 8 Tbsp. thawed COOL WHIP LITE Whipped Topping
- Heat oven to 350 degrees F.
- Mix sugar, tapioca and cinnamon in large bowl.
- Add apples and raisins; toss to coat.
- Spoon into pie crust; top with cookie crumbs.
- Bake 50 min.
- or until apples are tender and crust is golden brown.
- Transfer to wire rack.
- Let stand 15 min.
- before serving topped with COOL WHIP.
