leftover thanksgiving turkey casserole
- 4 cup leftover stuffing, divided
- 4 cup coarsley chopped leftover cooked turkey (about 1lb.)
- 3/4 cup mayo, divided
- 1/4 cup cranberry sauce
- 2 cup leftover mashed potatoes
- 1 1/2 cup motzarella cheese, shredded
- 1 nonstick cooking spray
- preheat oven to 375
- spray an 8in baking dish with nonstick cook spray.
- spoon into dish 2cups of stuffing.
- spread evenly.
- top with 2cups of turkey spread evenly over stuffing.
- in a seperate bowl.. mix 1/4cup mayo with cranberry sauce.
- and spread this evenly over turkey.
- combine remaining mayo, potatoes and cheese in a large bowl.
- spread potato mix on next.
- then add rest of turkey.
- top with remaining stuffing.
- bake for about 40 min.
- or until heated throughout.
- let stand 10 min before serving
