Stacked Tomato Salad
- 13 c. extra-virgin olive oil
- 3 tbsp. chopped fresh parsley
- 2 tbsp. fresh lemon juice
- 1/2 tsp. salt
- .13 tsp. Freshly ground black pepper
- 2 bunch arugula (stems removed)
- 3 small red tomatoes
- 3 small yellow tomatoes
- 1 small red onion
- 3 oz. 3 ounces Maytag blue cheese
- Whisk together olive oil, parsley, lemon juice, salt, and pepper in a small bowl.
- Toss arugula with 3 tablespoons olive oil mixture.
- Divide arugula evenly among 6 plates.
- Top with stack of several red and yellow tomato slices and garnish with red onion.
- Sprinkle with blue cheese.
