Thai Style Noodle Salad

  1. Heat oil in wok and stir fry rice noodles until soft.
  2. Transfer to colander and cool.
  3. Combine all other ingredients and toss through noodles.
  4. Sprinkle with chopped nuts just before serving.
  5. For Vegetarian/Vegan omit the fish sauce.
