Yogurt-Feta Dressing

  1. In a blender or food processor, combine feta, yogurt, 1/4 cup olive oil, mint, lemon zest and juice; sprinkle with salt and pepper.
  2. Blend or process until smooth, adding more oil if you need it to reach a smooth consistency.
  3. You can also mash mixture by hand, with a fork.
