Spicy Pear Cake Deluxe!
- 2 cups sugar
- 34 cup butter, softened
- 3 eggs
- 1 orange, zest of
- 13 cup orange juice, fresh
- 2 teaspoons vanilla
- 2 23 cups flour
- 1 12 teaspoons baking soda
- 1 teaspoon allspice
- 1 teaspoon cinnamon
- 12 teaspoon salt
- 3 cups pears, cored and chopped with skin
- 1 cup pecans, chopped
- Preheat oven to 350 degrees.
- Spray and flour a 9x13 inch cake pan.
- In a large bowl, mix together sugar and butter until light.
- Add eggs, orange zest, orange juice and vanilla.
- MIx until fluffy.
- Add dry ingredients and mix until ingredients are well combined.
- Stir in chopped pears and pecans.
- Pour batter into prepared pan and bake for 45 minutes to 1 hour (until a knife inserted into center comes out clean).
- Let cool -- Delicious plain or with whipped topping.
