Pan-Fried Bitter Melon
- 1 Bitter melon
- 1 tbsp each Soy sauce, sake
- 10 grams Garlic and ginger
- 1 tbsp plus Katakuriko
- 2 tbsp Oil
- Halve the bitter melon.
- Remove its seeds and fiber, and cut into 5 mm slices.
- You don't need to remove any bitterness by soaking it in salt water.
- Put the bitter melon and the ingredients into a plastic bag and let the flavors settle in.
- Transfer the bitter melon into a new plastic bag, and coat with katakuriko.
- Let some air into the bag and shake it around.
- The katakuriko will coat the melon nicely.
- Heat some oil in a frying pan and pan-fry the bitter melon.
- Flip them over once they're nicely browned.
- They're done when both sides become crisp.
