Black Bean and Sweet Potato Burritos Light

  1. Peel the sweet potatoes with a vegetable peeler and chop them into 1/2 inch cubes.
  2. Place the sweet potatoes in a glass casserole dish with a lid and 2 tablespoons of water.
  3. Microwave on high with the lid on for 7 minutes or until the sweet potatoes are soft.
  4. Chop the onion and mince the garlic.
  5. Drain the can of black beans, rinsing once.
  6. Spray a non-stick frying pan with oil and put on medium heat.
  7. Add all the ingredients except the tortillas.
  8. Cook 2-3 minutes, stirring.
  9. Once the ingredients are heated through, mash with a fork until you get the consistency you want.
  10. You don't have to mash it all if you like chunky burritos.
  11. Fill the tortillas, wrap as burritos and serve.
