Hawaiian Meatloaf
- 1 lb Ground Beef
- 1 lb Sweet Italian Sausage
- 1 20oz can Crushed Pineapple (divided drained juices reserved)
- 1 tbsp Pineapple Juice
- 1 Red Onion (chopped)
- 2 Eggs
- 1 cup Bread Crumbs
- 1 tbsp Minced Garlic
- 1 tsp Salt
- 1/2 tsp Pepper
- 1/2 cup Bbq Sauce (Jack Daniels olde no 7 works great)
- 3 slice Bacon (cut in half)
- 1 cup Bbq Sauce
- 1 Crushed Pineapple
- 2 tbsp Pineapple Juice
- Preheat oven to 350F.
- Mix all meatloaf ingredients together except bacon but use only half of the can of drained pineapple saving the rest for the glaze.
- Form into loaf on greased 9x13 baking dish and layer with bacon.
- Put into oven and cook for 50 minutes.
- While meatloaf is cooking mix together glaze then refridgerate until ready to use.
- after 50 minutes take out of oven and drain off fat and grease.
- Pour glaze over meatloaf and spread covering top and sides.
- Cook for an additional 20 minutes.
- take out and let cool at least 5 minutes.
