Black Bean And Chicken Casserole Recipe
- 1 lb skinless boneless chicken breast cut into strips
- 1/4 tsp salt
- 1/4 tsp chili pwdr
- 1/8 tsp pepper
- 1 c. brown rice quick cooking uncooked
- 1 1/4 c. chicken broth
- 1 can black beans (15 ounce) liquid removed and rinsed
- 1 can green chile (4 ounce) diced
- 1/8 tsp cumin and
- 1/8 tsp cayenne
- 1/8 tsp garlic pwdr
- 1/4 tsp onion pwdr
- 1/4 tsp dry oregano
- 2 ounce lowfat cheddar cheese grated
- Spray a 9x13 inch pan with Pam.
- Arrange chicken in pan and top with salt and chili pwdr and pepper.
- Bake at 350 degrees for 20 min or possibly till chicken is done.
- Meanwhile, cook rice according to package directions, substituting chicken broth for water and omitting salt and butter.
- When rice is done, fold in black beans, chiles and remaining seasonings.
- Pour drippings from cooked chicken into rice mix and mix well.
- Spread over chicken.
- Top with grated cheese.
- Return to oven for 5 min or possibly till cheese is melted.
- 5 servings (Serving size 1 1/4 c.)
