Black Bean And Chicken Casserole Recipe

  1. Spray a 9x13 inch pan with Pam.
  2. Arrange chicken in pan and top with salt and chili pwdr and pepper.
  3. Bake at 350 degrees for 20 min or possibly till chicken is done.
  4. Meanwhile, cook rice according to package directions, substituting chicken broth for water and omitting salt and butter.
  5. When rice is done, fold in black beans, chiles and remaining seasonings.
  6. Pour drippings from cooked chicken into rice mix and mix well.
  7. Spread over chicken.
  8. Top with grated cheese.
  9. Return to oven for 5 min or possibly till cheese is melted.
  10. 5 servings (Serving size 1 1/4 c.)
