Shrimp Stuffed Peppers Recipe
- 1/4 c. uncooked rice
- 1/2 c. water
- 1/4 teaspoon salt
- 2 med. sized green peppers, cored & seeded
- 1 (4 ounce.) can shrimp, liquid removed & rinsed
- 1/3 c. mayonnaise
- 1 tbsp. onion, minced
- 2 drops warm sauce
- 2 tbsp. cracker crumbs
- 1 tbsp. butter, melted
- Combine rice, water and salt in saucepan, bring to a boil.
- Cover, reduce heat and simmer 17 to 20 min.
- Remove from heat, set aside.
- Cook green peppers in boiling salted water 5 min, drain.
- Set aside 2 shrimp.
- Combine, rice, remaining shrimp, mayonnaise, onion and warm sauce; mix well.
- Spoon into peppers, place in an 8 1/2 x 4 1/2 x 3 inch loaf pan.
- combine cracker crumbs and butter; mix well.
- sprinkle on peppers; bake uncovered at 350 degrees for 30 min.
- Garnish with reserve shrimp.
- Yield: 2 servings.
- Easy to double.
