Aubergine, Green Bean And Red Pepper Salad Recipe
- Salt
- 1 x Aubergine, cut into 1/2" pcs
- 10 Tbsp. Extra virgin olive oil
- 2 1/2 tsp Garlic, chopped
- 1 lb Green beans, trimmed
- 1 lrg Red pepper, thinly sliced Salt and pepper

- Salt aubergine, place in colander and let sit for 30 min.
- Pat dry.

- Preheat oven to 350 degress, grease a large non stick baking dish and place aubergine in dish.
- 3.
- Combine oil and garlic; set aside 1/2 c. and brush remainder of the oil over all sides of the aubergine.
- 4.
- Bake in the oven till tender and brown; about 20 min.
- Remove from oven and let cold.
- 5.
- Steam beans till just tender-crisp; drain and rinse immediately under cool wate.
- 6.
- Combine with aubergine pcs and red pepper, and toss with remaining garlic oil.
- 7.
- Stir well, and season to taste with salt and pepper.
