Diabetic Banana Bread Recipe
- 1 3/4 c. cake flour, sifted
- 2 teaspoon baking pwdr
- 1/4 teaspoon baking soda
- 1/2 teaspoon salt
- 1/4 c. melted shortening
- 2 Large eggs, well beaten
- 4 teaspoon liquid sweetener
- 1 teaspoon vanilla
- 2 med. bananas, mashed
- Sift dry ingredients.
- Combine shortening, Large eggs, sweetener and vanilla.
- Add in to flour mix and stir only till flour is moistened.
- Mix in mashed bananas.
- Place in a greased 8 x 4 x 3 inch loaf pan; bake at 350 degrees for 60-70 min.
- Makes 15 slices; each slice equals 98 calories and is equal to 1 bread and 1 fat exchange.
