Steamed Salmon and Rainbow Vegetables
- 1 salmon fillet, 4-6 oz
- 1 cup broccoli floret
- 14 sweet potato, peeled and cut into matchstick-size pieces
- 12 beet, peeled and cut into matchstick-size pieces
- 5 mushrooms, cut in half
- Lightly oil a steamer basket.
- Set the basket in a large saucepan with water just lower than the basket.
- Add salmon and surround with broccoli, sweet potato, beet and mushrooms.
- Season with salt and pepper.
- Place over high heat, cover, and steam for 10-12 minutes, or until cooked through.
