Vegetarian Burritos
- 6 oz. frozen corn
- 6 oz. frozen broccoli
- 1 sm. red pepper, chopped
- 15 oz. spicy chili beans, undrained
- 1 tsp. chili powder
- 8 md. flour tortillas
- 1/2 cup cheddar cheese, shredded
- Salsa
- Sour cream
- Lettuce
- 1 tomato, chopped
- In large skillet, combine vegetables, beans, and chili powder.
- Boil, reduce heat, simmer 15 minutes.
- Spoon half cup veggie mixture down center of each tortilla.
- Top with cheese and any other of the toppings you want.
- Roll up and eat.
