Cheesy Beef Enchiladas

  1. Heat oil in a large frying pan, brown the beef until cooked.
  2. Stir in half the enchiladas sauce and simmer for 3 minutes.
  3. Place tortillas in microwave on HIGH for one minute or until warmed.
  4. Spoon two tablespoons of beef on the centre of tortilla, sprinkle with the spring onions.
  5. Roll and place seam down on a greased baking tray, cover with remaining enchiladas sauce and cream cheese spread.
  6. BAKE for 8-10 minutes at 180C.
  7. Serve with a green salad or rice.
