Caprese Pasta

  1. While the pasta is cooking, heat a large skillet to medium heat with the olive oil and 1 tablespoon of butter.
  2. When the butter has just melted, add the garlic and tomatoes with a sprinkle of salt and some crushed red pepperas much as you like!
  3. Let the tomatoes soften for 5 minutes until they are just starting to fall apart.
  4. Add the tomato paste, and stir for 1 minute.
  5. Add the wine and 1/2 cup pasta water; turn the heat up if it doesnt bubble!
  6. Allow sauce to simmer and reduce for 4 more minutes until the wine is half reduced.
  7. Right before serving, toss the sauce with the pasta, mozzarella, basil, and remaining butter.
  8. Toss for at least 90 seconds so the cheese can melt into the sauce.
  9. Taste, and season once more if youd like.
  10. Serve with as many toppings as you can fit on the plate, and dive in.
