Pineapple-Nut Bread
- 2 c. flour
- 1 c. walnuts, chopped
- 3/4 tsp. salt
- 1/2 tsp. ground mace
- 1 (8 1/2 oz.) can crushed pineapple in juice
- 4 Tbsp. margarine or butter
- 1 c. sugar
- 2 tsp. baking powder
- 1/2 tsp. baking soda
- 1 lg. egg
- 1/2 c. milk
- Preheat oven to 350u0b0.
- Grease 9 x 5-inch loaf pan.
- In a large bowl, mix well flour, sugar, walnuts, baking powder, salt, baking soda, and ground mace.
- In small bowl, beat egg, crushed pineapple with its liquid, milk and margarine.
- Stir egg mixture into flour mixture just until flour is moistened.
- Pour the batter into greased pan.
- Bake 50 minutes or until toothpick inserted in center comes out clean.
- Cool bread in pan on wire rack ten minutes. Remove bread from pan.
- Cool completely.
