Far East Chicken Stir-Fry
- 4 boneless, skinless chicken breasts, halves, cut into strips
- 1 Tbsp. oil
- 1 can (10 oz/284 mL) chicken broth
- 3 Tbsp. soya sauce
- 1 Tbsp. cornstarch
- 1 tsp. each: garlic powder and ground ginger
- 1 pkg (500 g) Japanese-style frozen vegetables Target 2 lb For $3.00 thru 02/06
- 1 1/2 cups Minute Rice Brand Rice
- COOK and stir chicken in hot oil in large frying pan over medium heat until lightly browned.
- STIR chicken broth, soya sauce, cornstarch and seasonings in small bowl.
- ADD broth mixture to frying pan and bring to a boil.
- MIX in vegetables; reduce heat and simmer until heated through.
- RETURN to a boil and stir in rice.
- Cover and remove from heat.
- Let stand 5 minutes.
- Fluff with a fork.
