Melon Bubbles

  1. Stir boiling water into gelatin in large bowl at least 2 minutes until completely dissolved.
  2. Stir in club soda.
  3. Refrigerate 1-1/2 hours or until thickened (spoon drawn through leaves definite impression).
  4. Measure 1 cup of the thickened gelatin into medium bowl; set aside.
  5. Add melon balls to remaining gelatin; stir gently until evenly blended.
  6. Spoon into 8 champagne glasses or dessert dishes.
  7. Beat reserved gelatin with electric mixer on high speed until fluffy and about doubled in volume.
  8. Spoon over gelatin in glasses.
  9. Refrigerate 3 hours or until firm.
