Raspberry Cordial
- 3 ounces (about 1/2 cup) fresh raspberries
- 3/4 cup superfine sugar
- 6 ounces cold water
- In a blender or food processor, puree the fresh raspberries.
- Transfer to a medium bowl.
- Add the sugar and water and stir until the sugar dissolves.
- Let macerate at room temperature for 2 hours.
- Strain the Raspberry Cordial into a jar and refrigerate for up to 2 weeks.
