Grilled Sesame Shrimp
- 2 pounds large shrimp, shells on (heads, too, if possible)
- 2 tablespoons coarse salt
- 2 tablespoons freshly ground pepper
- 2 tablespoons peanut oil
- 2 cloves garlic, minced
- 1 tablespoon ginger, minced
- 1 teaspoon red pepper flakes
- 2 tablespoons sesame oil
- Rinse the shrimp, pat them dry (leaving the shells on) and toss them in a mixture of salt, pepper, peanut oil, garlic, ginger and red pepper.
- Preheat grill or broiler.
- Place the shrimp on an oiled rack and grill for two to three minutes on each side.
- Be careful not to overcook them.
- Remove them from the grill, place them in a bowl and toss them with sesame oil.
- Serve immediately.
