Microwave Stuffed Zucchini Recipe

  1. Split zucchini lengthwise.
  2. Scoop out center flesh, leaving shell about 1/2 inch thick.
  3. Cook shells in microwave on HIGH for 7-9 min, covered.
  4. Let stand 5 min.
  5. Drain well.
  6. In oil cook onion, garlic, green pepper and zucchini pulp for 3 min.
  7. Add in salt and pepper and oregano.
  8. Cold slightly.
  9. Stir in veal, nuts, egg and most of bread crumbs.
  10. Stuff squash with mix.
  11. Blend remaining bread crumbs and cheese.
  12. Sprinkle over zucchini.
  13. Cook uncovered for 9 min on HIGH.
  14. Serve with sauce and buttered noodles.
