Microwave Stuffed Zucchini Recipe
- 3 zucchini, 1 1/2 pound
- 2 tbsp. oil
- 1/4 c. minced onion
- 1 clove chopped garlic
- 6 tbsp. minced green pepper
- 1 teaspoon oregano
- 1/2 pound grnd veal
- 1/4 c. sunflower seed
- 1 egg
- 1/2 c. bread crumbs
- 2 tbsp. Parmesan cheese
- Tomato sauce
- Split zucchini lengthwise.
- Scoop out center flesh, leaving shell about 1/2 inch thick.
- Cook shells in microwave on HIGH for 7-9 min, covered.
- Let stand 5 min.
- Drain well.
- In oil cook onion, garlic, green pepper and zucchini pulp for 3 min.
- Add in salt and pepper and oregano.
- Cold slightly.
- Stir in veal, nuts, egg and most of bread crumbs.
- Stuff squash with mix.
- Blend remaining bread crumbs and cheese.
- Sprinkle over zucchini.
- Cook uncovered for 9 min on HIGH.
- Serve with sauce and buttered noodles.
