Skittle Cookie
- 1 cup (225 ml) unsalted butter, at room temperature
- 3/4 cup (175 ml) granulated white sugar
- 3/4 cup (175 ml) firmly packed light brown sugar
- 2 large eggs
- 1-1/2 tsp (7 ml) pure vanilla extract
- 2-1/4 cups (525 ml) all-purpose flour
- 1 tsp (5 ml) baking soda
- 1/2 tsp (2 ml) salt
- 1-1/2 cups (350 ml) Skittles candies
- Preheat oven to 375 degrees (200 C.).
- Mix together butter, sugars, eggs and vanilla.
- Add in flour, baking soda and salt until well blended.
- Stir in Skittles candy.
- Drop by spoon onto a cookie sheet.
- Bake for 10-12 minutes or until done.
