Pesto New Potatoes
- 1 lb new potato (halved or quartered if necessary)
- 2 -3 teaspoons pesto sauce
- salt & freshly ground black pepper
- 1 ounce parmesan cheese, coarsely grated
- Place the new potatoes in a pan of boiling water.
- Cover and simmer for 15 minutes or until just tender.
- Drain and allow to cool slightly.
- Toss the drained potatoes in the pesto, season and serve immediately, garnish with the parmesan.
